This mix can be planted in the spring and fall with the Amaranth also being a good summer crop.

PLANTING/ HARVESTING INSTRUCTIONS:

Red Russian Kale:

In early spring, as soon as the ground can be worked, plant seeds 1/4 inch depth in full sun 5 inches apart. 40 days to harvest.

Plant also in late summer for an abundant fall crop that will usually survive the winter and give another early spring crop before it starts to flower.

Red Sails Lettuce: 

Can be planted in early spring and also late summer for fall harvest. For ongoing harvest, cut the outer leaves right above the base of the plant, let new leaves grow and harvest as leaves reach 3-6 inches long and leave 1/3 of the plant to continue growing. To harvest the full head, wait until it reaches maturity, then harvest from the base. 40-50 days to harvest.

Greek Amaranth:

In spring, after the danger of frost,

Plant seeds 1/8 inch depth in full sun 5 inches apart . Harvest the greenish-purple leaves when plant is 6-12 inches tall and steam like spinach. Mature plant can reach 9 feet in height with a large and glorious crimson red flower that produces a large quantity of seeds/grain.
